Fresh Cheese Makis on a Bunch of Herbs

Serves 4
2 small zucchinis
150g of fresh goat cheese (or fresh cow cheese)
1 tablespoon of Edmond Fallot tarragon mustard
Few fresh celery leaves
3 parsley leaves
1 Shallot
Lemon juice
2 tablespoon of olive oil
Paprika powder
Salt and pepper

Step 1

Wash and use a mandolin to cut the zucchinis in small slices.

Step 2

Boil the water and add the zucchini slices. Cook for 1 minute. Drain them and place them on absorbent paper.

Step 3

Pour some lemon juice and olive oil as well as salt and pepper on each of them.

Step 4

Cut the shallots in small pieces

Step 5

Mix the fresh cheese with mustard, freshly chopped herbs and shallots in a bowl. Season.

Step 6

On each slice of zucchini, place a teaspoon of cheese mixture and roll it as a sushi roll. Repeat until you have no more cheese.

Step 7

Sprinkle with paprika powder.
