Marinated Salmon Poke Bowl

Serves 4
4 salmon steaks
1 tablespoon of Edmond Fallot Seedstyle mustard
3 tablespoons of soy sauce
2 limes
30g of white sesame seeds
300g of (brown) rice
1l of water
1 cucumber
300g baby spinach
1 tablespoon of olive oil
Salt and pepper

Step 1

Place the salmon fillets in the freezer for 5 minutes. Take them out and cut them into cubes.

Step 2

Prepare the marinade : Mix the soy sauce with the juice of a lime, a little sesame seeds and the mustard. Pour the marinade over the salmon cubes and set aside in the fridge.

Step 3

Cook the rice. Drain, rinse and set aside.

Step 4

For the vegetables :
Peel the cucumber. Cut it into stick. Reserve. Heat the olive oil in a pan and quickly sauté the spinach leaves. Season with salt and pepper. Reserve.

Step 5

In a large individual bowl, place a the brown rice at the bottom. Add the diced salmon on one side, the spinach on the other side and finally the cucumber sticks. Sprinkle with sesame seeds and drizzle with a little marinade.

Serve with a lime wedge.
